  4. Add 1 Tbsp garlic olive oil and 2 Tbsp green curry paste to the hot pan. Over medium heat stir the paste for 1 minute until fragrant. Add coconut milk, chicken stock, fish sauce and lime juice. Bring to a boil for 5 minutes. This is to thicken the curry sauce. Now add back the chicken and vegetables and cover the pan. Allow to simmer for 8-10 minutes. Check that the eggplant is tender.
  5. Plate the food and garnish with Thai basil leaves. Serve and enjoy. Goes great with rice or naan bread.
