Dice Squash into 1" Cubes.
  3. Pour Squash on a baking sheet or into a casserole dish. Pour over the rest of the ingredients and mix well. Make sure Squash is in a single, even layer and then put into the oven. Roast for 40 - 50 minutes, or until soft and as caramelized as desired. I like to stir the Squash about half way through cooking.

For a sweeter version, just use about a quarter of the salt and add a few Tbsp of Brown Sugar or a Tbsp or two of Honey or Maple Syrup. Other popular additions are Cinnamon and Nutmeg. Another great dinner option is to add in @ 2 lbs. Skin On, Bone In Chicken (I prefer Dark Meat) Just sprinkle with the same seasonings and nestle it in a Casserole Dish with the Squash. Delicious!
